I need to add information to a payment request invoice after it is paid. Customers insurance company will not pay the receipt with out VIN # on paperwork.

Great question. At this time, invoices cannot be edited after they have been marked as paid.
As a workaround, you can add the VIN number to the client record, then open the original invoice and select Copy Invoice to create a new version. From there, include the VIN and manually mark the new invoice as paid so it reflects the correct information needed by the insurance company.
