When I enter a customer into CRM that doesn't have an email, will notifications be sent to their phone - reminders for appointments?

Yes — as long as SMS is enabled under Settings > Auto Client Messaging > Booking, the system will send booking confirmations and appointment reminders via text message.
Just make sure the checkboxes for both confirmation messages and booking reminders are turned on in this section.
With that being said, please note that this is a global setting. If enabled, SMS reminders would be sent alongside email reminders for contacts that have both an email address and a mobile number on file.
For example:- If a contact has both an email and a mobile number, they can receive both email and text messages (if both are enabled)
- If a contact doesn’t have an email address, they’ll still receive text messages as long as SMS is enabled and a mobile number is on file
